How to Rehydrate Abalone:
1. Soak the abalone in cold water in the refrigerator for one day. Then, cut open the abalone's mouth to remove the intestines and impurities.
2. Place the soaked abalone into boiling water, then reduce to a low heat and cook for 25-30 minutes, or pressure cook for half an hour.
3. Once cooled, change the water, cover, and continue to soak in the refrigerator for 1-3 days until soft, changing the water daily.
4. Rehydrated abalone can be cooked with meat in broth, braised, or stir-fried with other ingredients.
5. If preparing a Cantonese slow-cooked soup, simply soak the abalone in clear water for one day, clean out the intestines and impurities, then simmer in broth for 2-3 hours before serving.
